Ricotta is a dairy product, but not a cheese, made from the whey obtained during cheese production. The whey is heated to a temperature of 80-90°C, and the ricotta curds are obtained by "floating". Once floated, they are collected with a ladle and placed in a perforated mold to allow the excess whey to drain.
It should be consumed very fresh and is also available homogenized and packaged in various formats.
Ricotta is suitable for all kinds of preparations, both sweet and savory, or can be enjoyed on its own.
